Arroz con Leche

Desserts. You’ve had many different varieties over the years. From pastries to cupcakes to ice-cream; the sugar levels have never been higher. So why not change it up and try this delicious Latinx specialty: Arroz con Leche.

You’ll need:

  • 4 sticks of cinnamon
  • 5 cloves
  • 2 cups of rice
  • 6 cups of whole milk or coconut milk
  • 3 cups of water
  • ½ cup of sugar optional

Approx. time: ~45 minutes

Servings: ~10

Start by adding the cloves and the cinnamon to the water and boil. If you want to boil it quicker, add some salt! Boil until the water is a light pink color. Add the rice and stir. Bring it to a simmer and allow the rice to almost fully cook. About 17 minutes. After the rice is tender, drain the water and add milk to the rice. Make sure it covers the rice. Feel free to add more milk as needed. Continue simmering. Make sure to constantly stir! This will prevent the rice from sticking. Stir over a simmer for about 15 more minutes. Add milk as needed to prevent from drying. The mixture should be a runny mixture. Once the rice is large and tender, turn the heat off and add the sugar to taste. I use about ½ a cup of sugar. Allow it to cool and serve! It makes about 10 cups.
